Bakeress in the kitchen

You might remember a few weeks ago when i had the pleasure of meeting my fellow

baking inspiration….Bakerella…when she was here in Chicago signing her Cake Pops book.

{see if you can spot bakeress *here*}

As it would be….and you might have noticed…that i {bakeress} have not been baking lately..

so when i was at my besties home the other night…she fed me the most delicious pumpkin bars.

{of course this was after we had our EVE to drink}

I demanded the recipe and she told me it was a Williams Sonoma one….

so yesterday i headed over there to find it.

I walked into WS and asked about what i would need for the recipe of those

so the very nice lady told me i would need some of THEIR $10 yellow cake mix and some

of THEIR pumpkin butter which cost $9 for a jar of it.

I coughed a little bit.

I might have cleared my throat.

I also know that i am saving for some Anthro any extra money i can save..

is like gold around here.

So..i did what any good bakeress would do….

and headed over to Trader Joe’s for some yellow cake mix and some pumpkin butter.

I saved oodles of money.

I don’t know about you…but i almost hate to use the prettiest packaging ever

when it comes to baking…and T.J’s has the prettiest right now for their cakes and sugars.

I even bought the cranberry apple butter because i know that will also work in the bars

that i was going to make.

Obviously…not at the same time.

I mean the bars.

 Are you lost now.

What i mean is….that you can substitute the cranberry apple butter for the pumpkin should you want to.

Got it.

as i {bakeress} was in the middle of baking my pumpkin bars…

i heard a little rustling in the corner of my kitchen.

Low and behold…i found this little guy:

Fin named him squeakers.

We fed him a little cheese because obviously he was just a baby and needed some loving.

Alright…he might have been given some cheese…

but there was no loving going on.

I had to tell Fin that we must let him go outside so he can find his mommy and daddy.

And we did.

Sorry again…

i’m sure you don’t have an appetite anymore.

Don’t worry…i don’t get offended easily.

But for those of you that want to make these….

they are super easy….and the best part is..they are low fat!

Except for all the butter in them…but since you have to add butter to the recipe..then

let’s all just assume that they are still low fat. Oh..and we all know how healthy pumpkin is for us.

I will post the recipe at the bottom of the page..and you can print it out by

pressing that little button above the comments that says “print”.

Unfortunately for you….

you will also be getting a photo of a little mouse right along with your recipe.

By the way…if you are looking for really fabulous photos of baked goods..

because i realize mine have mice and what not mixed in…

you might want to take a peek at my friend Kimberly’s blog…{here}.

Her photos of baked goods are amazing as are her recipes.

She does not photograph mice in hers….but i {bakeress} do.

Pumpkin Butter Dessert Squares

1 package yellow cake mix; set aside one cup

1/2 cup butter, melted

3 large eggs

1 jar of pumpkin butter

2 tbsp milk

1 tbsp flour

1/4 cup sugar

1/4 cup butter softened

1 tsp cinnamon

Preheat oven to 350* F. Divide yellow cake mix, placing all but one cup in a mixing bowl.

Stir the melted butter and one egg into the cake mix. Press the mixture into the bottom of a greased 9×13 inch pan.

Mix the jar of pumpkin butter with two eggs and milk. Pour over the cake mix. Stir the reserved cup of cake mix with

flour, sugar, softened butter, and cinnamon. Mix together until crumbly. Sprinkle over top of the pumpkin layer.

Bake for 35-40 minutes or until golden brown. Cool. Cut into squares.

Sorry…that part will probably be printed right along with the whole mouse thing also.

Maybe you should just write the recipe down.

Happy Baking….

The Bakeress.

  1. Tis the season….for the little mices…

    Love this…..

    Lou Cinda 🙂

  2. Mmm, pumpkin and apple butters… *drool*

  3. You always make my day.
    LOVE that little mouse.

  4. These look so good. I made some pumpkin bars last year with a pumpkin butter from Williams Sonoma…it was very expensive…I’m sure the Trader Joes is much more affordable. I am going to look for it. Thanks!!

  5. Love the recipe…not loving the mouse;) Thanks for sharing! Hope you & yours have a Happy Halloween:)

  6. I Love pumpkin in any form and have tried several of your bakeress delights so I will try this one too.. Is it important to have Eve with this pumpkin bar? I think maybe it is…
Hope mr mouse found his Mum and Dad…

  7. the mouse….eeks! do you have a cat?? might be a good idea 🙂 sorry Finn…

  8. I actually love the little mouse right in the middle of the recipe. I might not love him so much if he were in my kitchen while I was making the recipe, though.

Mice are always nicer in pictures, I think.

  9. Me thinks I will copy, paste. 😉 Love it!

  10. Yum! mice and all….it still looks like a keeper of a recipe. I’m thinking (dangerous at times) that adding some pumpkin pie spices to the cake mix, might kick it up a little? or would it overwhelm the filling? hmmm…..then again, there are so many really great tasting different butters/jams that could also be changed out. Gee, talk about an all season recipe, thanks!

  11. Kasey, only you can capture the best picture of a mouse! in a beautiful shade of grey too!!!!

  12. I rather like the mouse. He is cute. Especially outside.

  13. The mouse is really cute.

I also love your writing style, It keeps me coming back for more!

  14. You crack me up girl – but I am so proud of you for putting that new oven to work. And hey – Ratatouille is one of my favorite movies so I am pretty sure that your little friend was helpful…
Come by for baking lessons any time. (or coffee, breakfast, lunch, dinner, a glass of wine, etc… etc… etc…)

  15. Just wanted to le tyou know I made these bars this morning and did in fact EAT the WHOLE batch.

  16. p.s. There were no mice needed;-)

  17. Darling mouse. I hope it survived with the cold we are having.
Off to T.J’s to grab some pumpkin butter!!

  18. Exsqueeze me!!! You need to put a mouse-picture-disclaimer on the top of your post. Some of us have an irrational fear of rodents and may or may not pass out at the sight of them. Real life or just a picture.

  19. I just about died when I saw the picture of that mouse! We you that calm when you found him?

  20. thank you for the recipe! the pumpkin bars sound divine-ly yummy…can’t wait to make them!
I use the pumpkin butter in pancake mix for delish pumpkin pancakes – the cranapple butter can be used, too! We do these pancakes at our bed and Breakfast, Petit Soleil – you can spruce up the syrup by adding about a TBS. of apple juice concentrate to the syrup and warming it up in the microwave…
    Thanks again!
    Smiles, Dianne
